{Sugar Free Sunday - Apple Streusel Muffins}

A few days ago, Yvonne @ Stone Gable posted THIS recipe for her homemade StoneGable Raw Apple Muffins With Streusel Topping, they looked SOOO yummy! They really looked like something the huzby would like, so I saved the recipe & decided to try to make it low sugar.  Here's my version.

Low Sugar Apple Streusel Muffins

4 cups (1/4-inch diced) Granny Smith apples (about 1-1/2 pounds)
1 cup splenda
2 large eggs
1/2 cup vegetable oil
2 teaspoons vanilla
1 cup all purpose flour 
1 cup wheat flour
2 teaspoons baking soda
1/2 tsp nutmeg
1 teaspoon salt
1 cup oats

Streusel Topping
1/4 cup wheat flour
2-3 TBS splenda
2 TBS butter

Preheat oven to 325 degrees.
In a large bowl, I mixed together the apples and splenda. In a second small bowl, whisked together the eggs, oil, and vanilla.
 In a third bowl, mix together the flours, oats, baking soda, cinnamon & vanilla seasoning, nutmeg and salt.

Then stir the egg mixture into the apple mixture. Add in the flour mixture in thirds, and mix until the batter is combined (the batter will be stiff). 

Put the mixture in a greased muffin tin & top with streusel topping. How did I make the streusel topping, you ask? The same way Yvonne did, except I substituted the flour for wheat flour and the sugar for splenda. Mix the three ingredients until they are crumbly & then sprinkle on top of each muffin.


The verdict? The huzby says these are by far one of his favorite muffins that I've made yet!! Woooohooooo! Gold Star for me! I thought they were a little dry {probably b/c of the wheat flour, next time I will probably add 1/4 - 1/2 cup of low sugar applesauce}.

I sure wish my kids would eat apple muffins!!! If I made these, I would be the only one eating them!!! They look great.
